Now, in honor of Father's Day, my husband really wanted to go grilled-cheese-crazy.

So, that's just what we did, calories be damned.

. Their June 2013 issue served as the inspiration for our dairy and carb overdose.

First, preparations must be made:

Bread must be baked and walnuts toasted.

Grate the cheddar.

This didn't need to be prepped, but I had no idea it even existed! It's practically a health food. Yet another reason I love Trader Joe's. 

 Onions must be caramelized, too.

The toasted walnuts are incorporated into a Charred-Scallion and Basil Pesto, i.e., the most scrumptious pesto we've ever made!

I'd like to slather this blue-and-cream cheese spread all over my body! It's just that good. We spread it on a simple grilled chicken sandwich the next day and it was ridiculously tasty. Might have to keep this on hand at all times...

And bacon makes everything better, am I right?



--we're ready to assemble the various grilled cheese concoctions!

1. Caramelized Onion, Muenster, and Spicy Mustard on pretzel bread. The complexity of the flavors on this one will knock your socks off if you try it. You've got sweet, spicy, and salty all in one bite.

 2. Pesto and mozzarella on ciabatta bread. It's a classic, what can I say? Bonus: Pesto is one of the few green foods the kids will gladly eat.

3. Bacon and blue cheese spread, also on ciabatta. This one was my absolute favorite!!

4. Cheddar, tomato, and tarragon on sourdough. This was a hit with the kiddos.

To keep 'em warm between batches, we put them in the oven on a low setting.

Cut into wedges and garnished with cornichons, they were ready to be inhaled! 

He was so proud of himself for eating--and enjoying--onions. Winning!

Annnnd because I have no self-control, I ate a sundae for dessert.  

Some folks would intervene when their two year-old is standing on the edge of the couch.
